Harissa 1 cup dried red chili peppers 2 tsps salt 2 cloves garlic 2 Tbsp lemon juice (approx) 1 tsp ground cumin powder olive oil Put chilies in a medium saucepan and cover with cold water. Place over high heat and bring water to a boil. Remove from the heat and let sit for one hour.
Drain the chilies and put in a blender or food processor) a blender will do a better job) along with the salt and garlic. Add the lemon juice a little at a time to keep the mixture moving. If the peppers don't seem to be blending, add a little more lemon juice.
Once the mixture is blended, remove and place in a small glass jar. Stir in the cumin and smooth the mixture down. Pour in enough olive oil to completely cover the harissa. Cover and refrigerate.
Makes about 1/2 cup.
