Spinach Coconut

Mchicha na Nazi (Tanzania) (SPINACH WITH COCONUT) 1 large bunch fresh spinach (silver beet) or 500 g (1 lb) frozen spinach (silver beet) thawed 250 ml (8 fl oz) coconut milk 60 g (2 oz) ghee (Indian cooking butter) or butter 1 onion, diced 1 tomato, diced 5 g (1 teaspoon) curry powder Remove the stalks and wash the fresh spinach (silver beet) thoroughly. Cook the fresh spinach (silver beet) in the coconut milk for about 5 minutes and drain well. Save the coconut milk.
In a saucepan, heat the ghee or butter and fry the onion, tomato and curry powder for about 5 minutes. Add the cooked spinach (silver beet) or the frozen spinach (thawed and drained) and the coconut milk. Stir all ingredients well and cook for a further 15 minutes over low heat. Serve hot with rice and fried fish dishes.
Serves 4.
