SPINACH AND GROUNDNUTS
East Africa
Serves 4.

10-ounce package frozen spinach, thawed and drained
1 cup chopped onions
1 tablespoon oil
1/4 cup chopped unsalted peanuts

Cook spinach in 1 tablespoon water until tender. In a heavy stewing
pan, fry onions in oil until golden. Add onions to spinach with
peanuts and 2 tablespoons water; mix well. Bring to boiling then
simmer several minutes to blend flavors.

Note: Various other greens - pumpkin, bean, sweet potato, and
cassava leaves - are prepared the same way as spinach.
