Crunchy Chicken Bites
700g chicken breast, cut in strips
Vegetable oil
1 packet flavoured Corn Chips, preferably BBQ
1 packet Southern Fried chicken coating
salt
pepper
chili powder to taste
In a large bowl, place chicken and coat with small amount of oil.
In a bag, place corn chips and crush as finely as possible. The
smaller the better because it sticks to the chicken. Mix the
seasoning mix with the corn chips then either place chicken in bag
and shake or pour mixture over chicken and pack with hands. Try to
get as much of the mixture on as possible.
Place coated chicken on a baking tray lined with baking paper.
Sprinkle remaining mixture on top or use it to coat vegetables.
Bake around 200C until nice and crunchy.
