Sausage In Red Wine
2 pounds polish sausage (or other good quality sausage) 1 bunch scallion, chopped (include green part) 1 1/2 cups dry red wine 1/2 cup parsley, chopped
Cut sausage in 3 in. lengths. In a heavy pan over medium heat, brown sausage lightly on all sides: sprinkle with scallions halfway through the browning process.
Add wine, cover pan and bring to a boil. Reduce heat to a simmer; cook sausage for one hour, turning occasionally.
Place on heated platter; sprinkle with parsley.
Also excellent served as hors d'oeuvre; cut sausage in shorter lengths; put in chafing dish, serve with toothpicks.
