Spinach and Feta Rolls

Yields: 18 rolls
2 T veg oil 2 onions finely chopped (I use 1 ) 1 (10oz.pkg.) chopped spinach thawed 2 tsp dried dill weed (or use fresh 3-4 T.) 4 oz. feta cheese crumbled 1 egg beaten 3T. sour cream 12 sheets of filo thawed 1/2 C butter melted
Heat oil, add onion cook on med. heat until soft. Drain the spinach, then place in colander and press out as much water As possible. Stir spinach into the onions and cook 2 minutes. Add the dill and feta cheese, cool the mixture a few minutes. Mix in the egg and sour cream, refrigerate until cold.
Work with 2 sheets of filo at a time (cover the remaining sheets with plastic wrap). Lay one sheet on counter or table, brush the sheet with melted butter cover this sheet with the second sheet. With the long edge facing you cut into 3 strips (each will be 6" x 14") Place a spoonful of filling at one end of the strip, roll tucking in sides (like a spring roll), brush end with melted butter to seal. Repeat last 3 steps until you have 18 rolls. Place seam side down on a baking sheet. Can now be refrigerated for later use. Preheat oven to 400 degrees bake for 15 min. (until golden brown). Serve hot.
