Pan-Asian Stir Fried Beef Noodles
1-1/2 lb flank steak, trimmed of excess fat 1 red onion, small dice 1" fresh ginger, thinly sliced 3 cloves garlic, thinly sliced 6 spring onion whites, sliced into small disks 1 lemon grass, trimmed of tough parts, fine chop 4 dried chilies, crushed 1 Tbsp fresh coriander, fine chop 1/2 green bell pepper, small dice 1 Tbsp whole unsalted peanuts, dry fried to roast and crushed 4 mushrooms, thinly sliced 2 Tbsp tamari sauce (or soy sauce with 1 tsp sugar dissolved into it) 1 lime (juice of) Wasabi (to taste) Fresh egg noodles 1 tsp minced garlic 1 tsp minced ginger 1 tsp fish sauce 1/2 tsp coarsely ground salt 1/2 tsp coarsely ground pepper 1 Tbsp red panang curry paste 1 Tbsp sesame oil 2 Tbsp soy sauce 1 lime (juice of)
With the exception of the oil and curry paste, combine all ingredients of the marinade. Lightly score the steak and rub it with the sesame oil. Work in the curry paste and place in a large bowl, covering it with the rest of the marinade. Turn a few times, then set aside for two hours.
Dry pan-fry the marinated steak over a high heat, turning several times and cook to desired doneness. Remove steak from pan and place on a cutting board. Allow to stand for a few minutes, then slice across the grain of the meat into 1/2" pieces. Slice in the opposite direction into 1-1/2" to 2" long pieces. Place in a large bowl.
Place a large flat pan or wok over medium high heat and add the sesame oil. When sizzling, add the red onion and stir-fry until soft. Add the beef and continue to stir-fry for a minute or two. Add the ginger, garlic, lemongrass and chilies and stir-fry for about a minute. Add the tamari sauce and stir in, then add the remaining ingredients and stir-fry for five minutes. Remove from heat and place in a large bowl.
In the same pan, stir fry the noodles (prepared in accordance with their instructions) with a little vegetable oil over high heat for about 3 minutes. Add the rest of the meat mixture and continue stir-frying for a minute or so. Remove from heat and place in a large bowl. Stir in wasabi to taste, sprinkle with some freshly ground pepper and some sprigs of fresh coriander.
