Chicken Namasu

2 pounds chicken thighs
8 cucumbers, peeled
1 cup sugar
1 cup vinegar
1/2 cup sesame oil
3 tablespoons sesame seeds
8 cloves garlic, minced
2 chile peppers, minced (optional)
2 tablespoons hondashi (Japanese seasoning)
8 green onions, sliced
1 cup soy sauce
1 tablespoon garlic salt

Simmer chicken in garlic salted water. Cool. Remove skin, fat
and bones and shred. Cut cucumbers in half lengthwise and soak in
ice water for 1/2 hour. Drain. Remove seeds from center and slice.
Combine all ingredients and marinate overnight in refrigerator.
