Chicken in Peanut Sauce.

1 Tbsp oil
1 lb chicken, cubed (Breast is best)
1/3 cup dry white wine
1 Tbsp grated ginger
1 garlic clove, crushed
1 cup chicken stock (or a cube)
1/3 cup peanut butter (Crunchy is best)
2 scallions or a small onion chopped
1 red chilli, sliced (Hot or mild)

Marinate the chicken pieces in a mixture made from the wine, ginger
and garlic for at least 30 minutes. Drain and reserve the marinade.

Heat the oil and brown the chicken pieces

Add the reserved marinade, stock and peanut butter. Bring to a
simmer for 5 minutes until the chicken is cooked. Add the chilli
and onions for the last minute before serving.

Delicious with any combination of rice or traditional vegetables.
