Veggie Chow Mein

2 cups broccoli, broken into flowerets
2 tbs. cooking oil
1/4 med. head bok choy, chopped
1 med. zucchini, chopped
2 tablespoons minced fresh ginger
6 green onions, cut in one and a half inch diagonals
4 cloves garlic, minced
1 cup bean sprouts
8 oz Chow mein noodles or fettuccine noodles, cooked
1 c. veggie broth
2 tbs. cornstarch
2 Tbs. rice wine vinegar
1/4 cup soy sauce
2 Tbs. sugar, granulated

For sauce, mix half of the veggie broth with the corn starch, rice
wine vinegar, sugar and soy sauce, set aside until the noodles are
added at the end.

Stir fry broccoli for 5 minutes in the oil and add half of the
veggie broth. Add bok choy and sir fry 3 minutes. Add zucchini and
ginger and stir fry another 3 minutes. Add onions and garlic and
fry another 2 minutes. Add noodles, sauce, and sprouts and stir
fry until incorporated and sauce thickens and turns clear.
