Sri Lankan Eggplant Curry

1 lb. eggplant
1/4 tsp turmeric
1-1/2 tsp salt
Oil for deep-frying
2 green chilies
2 small onions, chopped
2 tsp ground coriander
1 tsp ground cumin
10 curry leaves
1 cinnamon stick
1 cup coconut milk
1-1/2 tsp salt
3 cloves garlic, chopped
1-1/2 tsp ground mustard
2 tsp sugar
2-inch piece rampa (pandan leaf)

Slice eggplant into thin 2 inch long pieces, sprinkle with turmeric
and salt. Deep-fry until golden. Combine everything else until
golden, bring to a boil. Add eggplant and simmer until thick.
