CHILLI FISH & NOODLE STIR-FRY
Serves 4

1 lb 2 oz boneless firm white fish fillets, 4cm pieces
7 oz thin egg noodles
2 tbsps peanut oil
7 oz snow peas(mange tout), halved
7 oz red bell pepper, sliced
7 oz yellow bell pepper, sliced
5 oz onion, chopped
1 tsp chopped chilli
2 1/2tbsps lime juice
4 tsps fish sauce
2 slices ginger, chopped
1/4 cup chicken stock

Cook noodles; drain and rinse under cold water. Heat 1tbsp oil in
wok and cook fish in batches. Remove and keep warm. Heat remaining
oil, add vegetables and stir-fry till just tender. Return fish
with noodles and combined remaining ingredients. Stir gently till
hot.
