Fried Rice

3 eggs
2 cups white rice
3 Tbsp oil
small can sliced water chestnuts
1 cup frozen mixed vegetables (corn, peas, green beans)
soy sauce

Prepare rice and set aside. Scramble the eggs and set aside. Heat
the frozen vegetables in the microwave to thaw and warm and set
aside. Heat oil in wok or deep skillet, add rice and stir fry for
3-4 minutes, add the remaining ingredients (except for soy), stir
to heat, stir in soy sauce until the mixture has a light golden
brown color. Salt and pepper to taste, careful with the salt
because the soy is high in sodium.
