Goh-mae recipe for 6
1 T salt 1 1/2 lb fresh spinach washed 1 T black sesame seeds 1/4 cup niban dashi 1/2 t sugar 1 t soya sauce
Cook spinach in 1 1/2 cups of water with the salt for max 5 minutes or until slightly wilted. Plunge into cold water to set colour. cut away and discard stems and squeeze dry. Cut into 1 inch pieces and squeeze dry again (with your hands). Put in a large bowl
Heat a pan over high. Heat the sesame seeds, skaking (the pan) constantly until they are slightly toasted or brown. (You can use white seeds)
Combine niban dashi, sugar, and soya sauce in a small saucepan and bring to a boil. Then cool to room temperature.
Pour sauce over spinach and toss to coat leaves thoroughly. Divide into 6 bowls and sprinkle sesame seeds evenly over each bowl
