Hot and Sour Soup
Yield: 4 Servings

28 oz chicken stock
3 slice ginger root
2 Tbsp soy sauce
1/4 cup rice wine vinegar
1/2 tsp hot chili oil
1/2 tsp sesame oil
1/2 tsp sugar
1/2 tsp white pepper
1/2 cup bamboo shoots, julienned
1/2 cup tofu, cubed
1 egg, lightly beaten

2 scallion, diagonal slice
1/4 cup cilantro,chopped

Bring chicken stock and ginger root to a slow boil for two minutes.
Discard ginger. Turn heat down. Add rest of the liquid ingredients,
the sugar, and the white pepper. Stir until combined. Add bamboo
shoots and tofu. Stir until combined. Bring the soup to a slow
boil again and quickly add in the lightly beaten egg while stirring.
Remove the pot from the heat immediately and continue to stir to
break up the egg pieces. Serve with garnish, if desired.
