1 to 2 cups seasonal fruit
3 cups apple juice
3 tablespoons agar agar flakes
pinch sea salt

Combine everything in a saucepan and slowly bring to a boil. Lower
heat and simmer for 10-15 min until agar agar flakes disolve. Pour
Liquid into another bowl or mold to set. TO speed up the setting
you can put it in the fridge.

After it is set, I like to put it in the food processor and whip
it into a fruit "mousse" I also like to make different kinds of
differnt colors (Blueberry, strawberry and peach, for example) and
layer them in a wine glass to serve.
