Marinated Cucumbers

Oriental Cucumbers
4 cucumbers 6 tablespoons red wine vinegar 1 1/2 teaspoons sugar 3 tablespoons Japanese soy sauce 2 to 3 tablespoons olive oil
Peel cucumbers. Slice lengthwise. Slice in half crosswise to form four pieces. Lay cucumber on the counter with seeds showing. Hold tip of the bowl of a spoon perpendicular to the cucumber and scrape gently through the seed area. The seeds will pry loose from the cucumber. Do not try to pull out all the seeds in one swipe or it will tear the surrounding cucumber flesh. Clean out the seeds using several swipes. Slice the cucumbers crosswise into half moon slices.
Combine all ingredients and stir thoroughly but gently. Let salad marinate for a minimum of three hours. Refrigerate the cucumbers while marinating. Stir occasionally while marinating. Drain well before serving.
