Pad Thai
1/2-1 lb pork loin (cut into thin strips) 1 pack fried tofu (cut thin strips) 1/2 bag noodles (thin or vermicelli or Vietnamese pho) 1 onion (diced) 4 cloves garlic (chopped) 1/2 lime 3 Tbsps ketchup 2 peppers, chopped finely 1 tsp sugar 1 tsp pepper 1 tsp salt 1/2 cup fish sauce 1/2 lb bean sprouts 4 Tbsps cilantro, finely chopped 4 Tbsps. chopped peanuts 4 Tbsps oil 4 Tbsps green onions, finely chopped
Soak noodles for 30 to 45 minutes in warm water. Drain well. Prepare all other ingredients.
Heat oil in wok or frying pan and fry garlic and onions until fragrant. Add pork, and chili peppers. When pork is cooked, add noodles, then add tofu.
Add sugar, fish sauce, salt, ketchup, pepper, and lemon. Mix well, using 2 pairs of chopsticks, so not to crush noodles, unless using wok style cooking. Add green onion, cilantro and bean sprouts. Mix well add peanuts. Mix and serve hot with extra peanuts and lime on the side.
