Pad Thai

2 cups rice noodles (medium size)
2 Tbsp vegetable oil
1 Tbsp sugar
1 Tbsp oyster sauce
1 Tbsp vinegar
1/2 tsp. paprika
1 Tbsp chopped roasted peanuts
1 egg
1/4 lb bean sprouts
1/2 cup thinly sliced chicken breast
1/2 cup shrimp, shelled and deveined
1 clove garlic
4 stalks green onion cut into 1" lengths

Soak the rice noodles in warm water for 30 minutes and drain. Heat
the oil in a wok over high heat. Add the garlic and cook until
light brown. Add the chicken, shrimp and egg. Stir fry for 5
minutes. Add the noodles and stir fry for an additional 2 minutes.
Add the remaining ingredients (except green onions and beansprouts).
Stir fry for another 3 minutes. Turn off the heat, add the green
onions and beansprouts. Mix well and sprinkle with extra chopped
peanuts, if desired. Serve hot. 2 servings.
