Pickled Garlic 01

Garlic in Molasses and Soy Sauce (ninniku no kurozato-zuke)
2/3 lb garlic, cloves separated and peeled 2 T salt 6 T molasses 1/4 tsp salt 2 T soy sauce
Place garlic cloves in a bowl and sprinkle on 2 T salt. Cover with a plate and let stand 2-3 days. Drain.
Add the 1/4 tsp salt to the molasses. Place garlic in a lidded jar and add molasses and soy sauce. Cover and store in a cool place for 1 month. The garlic will turn amber color. Keeps indefinitely.
