Low-Fat Tung Sun Ch'ao Jo (Pork with Bamboo Shoots)

1 tsp oil
2 cups sliced bamboo shoots
2 Tbsp soya sauce
1/2 tsp salt
2 Tbsp sherry
1 tbsp cornstarch
1/2 lb sliced pork tenderloin
1/4 cup water

Heat oil in nonstick pan, when it is hot add bamboo shoots and
saute for 2 minutes. Remove from pan. Mix next 4 ingredients and
coat sliced pork. Reheat pan and saute pork for about 5 minutes.
Add bamboo shoots and water and bring to a boil.Simmer for 1 minute,
stirring all the time. Serve very hot in a shallow dish. Makes 4
servings.
