Prik Nam Pla (Thai Dipping Sauce)

1 tsp fresh ginger, minced
1 tsp garlic, minced
1 tsp shallots or scallions, minced
1/2 tsp sugar
juice of 1 lime or lemon
4-5 Tbsp fish sauce (nam pla)
3 Tbsp water
2-4 small Thai chiles (very hot)
1 lime leaf (kaffir lime, available in Asian food stores)
cilantro

In a small bowl blend ginger, garlic, shallot, sugar, lime juice,
fish sauce and water. Seed chiles (optional) and mince. Roll lime
leaf and cut into very thin stripes. Chop cilantro. Mix into sauce
and let stand for a few minutes. Basically, prik nam pla is lime
juice, fish sauce and chiles.
