Sweet Red Bean Paste
Simmer equal amounts (by volume) of boiled azuki beans and sugar over low heat with a pinch of salt, stirring frequently, until it becomes thick and glossy. For thick & chunky bean paste, mash the beans with a wooden spoon to obtain the texture you like. For very smooth paste, puree it with a handblender, or toss it in a blender or food processor.
I use the bean paste in steamed buns, as a surprise centre in rice balls, and a lot of other recipes. I didn't like it when I first ate it some years ago, but have developed a real affection for it now.
