Seaweed Snack
1 Tbl. sesame oil 2 sheets nori - cut or torn into small 1" pieces 1 Tbl. sesame seeds soy sauce - to taste 2 scallions, green part only - sliced thinly red pepper - to taste
In a small heavy skillet (preferably cast iron), heat sesame oil over medium heat for about 30 seconds. Add nori and sesame seeds, tossing with a bamboo paddle until the seeds brown and start to pop. Add a few splashes (about 1 Tbl. or to taste) of soy sauce, the scallions and a few pinches of red pepper. Remove pan from the heat, stirring until well mixed. Allow to cool to room temp.
NOTE: the nori will wrinkle up into little bundles as it cooks, so don't expect it to stay flat!
Roll it in lettuce with rice and those tiny dried fish in the bag.
