Hot and Spicy Noodles

1 pound Chinese/Japanese noodles, cooked and drained
1 teaspoon sesame seeds
2 tablespoons rice vinegar
2 tablespoons soy sauce, low sodium
2 cloves garlic, chopped
1 tablespoon sesame oil
1 tablespoon Szechuan chili oil
1 teaspoon sugar
1/2 teaspoon ginger (optional)
3 tablespoons peanut butter
4 tablespoons scallion, chopped

In frying pan, lightly brown sesame seeds, about 4 minutes. Remove
from heat. Add to frying pan all remaining ingredients except
noodles. Place frying pan over low heat enough to melt peanut
butter and blend ingredients. Mix sauce in with cold, rinsed noodles.
Top with 4 tablespoons chopped scallions. Refrigerate. Eat cold.
