Shrimp Toast
Makes 48 pieces

12 slices white bread
1 lb cooked shrimp
1/2 cup whole water chestnuts
1 Tbsp scallions, minced
1 egg
1/2 tsp salt
1/2 tsp ground white pepper
1-1/2 tsp dry sherry

Trim crusts from bread. Place shrimp, water chestnuts and scallions
in food processor or blender. Chop until very fine. Beat egg. Add
salt, pepper and sherry to shrimp mixture. Mix well. Pour oil into
deep fryer or skillet to depth of 2 inches. Heat until oil reaches
350F. Spread shrimp mixture over bread slices. Cut each slice into
4 pieces. Fry bread until golden brown, about five minutes. Drain
and serve immediately.
