Somen noodles with chilli and lime dipping sauce

350 gr. (11 1/4 oz) dried somen noodles
12 cooked medium prawns, shelled

1 teaspoon sesame oil
2 red chillies, seeded and chopped
2 teaspoons grated ginger
4 tablespoons soy sauce
2 tablespoons sweet sherry
3 tablespoons lime juice
2 tablespoons brown sugar

Place the noodles in a saucepan of boiling water and allow to boil
for 10 minutes or until dente. Drain and run noodles under cold
water. Chill noodles in refrigerator until cold.

To make dipping sauce, place oil in a saucepan over medium heat.
Add chillies and ginger, and saute for a minute. Remove pan from
heat and stir soy sauce, sherry, lime juice and sugar through oil
mixture.

To serve, place noodles and prawns on serving plates. Spoon dipping
sauce into small bowls.
