Spicy mayo
Mayo #1 - mayo, sriracha hot sauce, masago or tobiko. I've seen this combo used at a decent Japanese restaurant in San Jose, CA. The chef mixed these together along with finely diced tuna for a spicy tuna roll.
Mayo #2 - the above ingredients (less tuna) with a few drops of dark (not cold-pressed) sesame oil or finely minced roasted sesame seeds. I've used this particular mixture with some of my veggie maki with good results: Per 1 tbs. of mayo add, 1 or 1 and 1/2 tsp. masago, 3/4 tsp hot sauce, 1 or 2 drops sesame oil (NO MORE). If you don't have the sesame oil, use 1 tsp sesame seeds.
Mayo #3 - 2/3 mayo, 1/3 good quality dijon mustard. Goes well with veggie rolls.
Mayo #4 - Mayo #3 with chopped roasted sesame seeds or oil. Tastier than Mayo #3 for veggie rolls. Per tbs mayo/mustard, add 1 tsp seeds or a drop or two of sesame oil.
