Cantonese Sponge Cake

8 eggs
2 cups castor sugar

3 cups cake flour (low gluten flour)
1.5 cups milk
1 tablespoon alkaline water
1 tablespoon baking powder
0.5 tablespoon vanilla extract
1/2 cup lard
1/2 cup unsalted butter

Beat the eggs with the eggbeater until stiff and standing peaks.
Add castor sugar and continue to beat for 5 minutes.

Sieve the flour and baking powder, add vanilla extract, milk, mix
with egg mixture, stir lightly.

Dissolve the lard and butter by heating (low heat), add alkaline
water, and mix with the flour mixture. Stir evenly. Put in the
steamer, with wax paper below and steam over high heat for 30
minutes. Remove, cut into 3" X 3" cubes and serve.
