STIR FRIED CHILI PORK Serving Size: 4
1 lb lean pork 1 tsp light soy sauce 2 tbsps rice wine or dry sherry pinch salt 2 tbsp sesame oil 1/2 lb chili fresh mild 3 tbsps peanut oil 3 tbsps garlic finely chopped 1 tsp red chili powder 1 tsp Szechuan peppercorns roasted and crushed 3 tbsps water 1 tbsp light soy sauce 2 tbsp sugar
Cut the pork into 3-inch thin slices and combine with the soy sauce, 1 tbsp rice wine, salt and sesame oil.
Cut the chilies in half lengthwise and seed them. Heat a wok or large skillet until it is hot. Add the 1 1/2 tbsp of peanut oil and pork and stir-fry for 1 minute. Remove the pork with a slotted spoon. Reheat the wok or skillet and the remaining oil. When it is very hot, add the fresh chilies, garlic, chili powder, and the peppercorns and stir-fry for 30 seconds. Then add the water, 1 tbsp rice wine or sherry, soy sauce, and sugar and cook for another 30 seconds. Return the meat to the mixture and heat through. Stir well, turn onto a platter, and serve.
