Inside out roll

1 sheet nori
prepared sushi rice
3 pieces cucumber about 3" long and 1/4" thick
3 pieces tuna
1 T spicy mayo (1 part chili paste to 3 parts mayo, season with sesame oil)
toasted sesame seeds
1 T chopped scallions
1 T tobiko (optional)

Spread the rice on the sheet of nori using dampened hands.

Sprinkle toasted sesame seeds on the rice and press lightly to
secure them.

Flip the sheet over and lay the cucumber, tuna, scallions and tobiko
(if using) horozontally across the edge closest to you. Top with
spicy mayo. Some people chop the tuna up and mix it with the mayo.

Carefully roll the maki up. Use the mat to press it into shape.
Remove from the mat. Trim the ends and cut the maki into 6-8
pieces.
