Party Sushi (California)

2 Japanese cucumbers
2 cups imitation crab
6 cups sushi rice
2 large avocadoes, peeled and sliced thinly
1 bottle Nori Komi Furikake (seasoning)

Slice cucumbers thinly diagonally, salt lightly. Rinse cucumbers
and pat dry. Spread half of cooled sushi rice in a lightly greased
9-by-13-inch pyrex dish. Layer ingredients in this order: sliced
avocado, crab, cucumber and remaining rice. Cover with plastic
wrap. Put a cutting board on top and weight down. Refrigerate
for 20 minutes. Remove board, weight and wrap. Turn out onto
serving tray (place tray on top of dish and flip over carefully).
Sprinkle with seasoning. Cut into squares.

Variation: Chop crab and mix with 1/2 to 1 cup mayonnaise.
