Sweet Sour Chicken 02

Sweet and Sour Chicken
Serves 6
1 1/2 lb. chicken, boned and cubed
1/2 cup water
1/4 cup brown sugar
1/2 tsp salt
10 oz pineapple chunks
1/2 cup sliced onion
2 Tbsp butter or cooking oil
1/3 cup vinegar
2 Tbsp cornstarch
1 Tbsp soy sauce
3/4 cup sliced green bell pepper
Brown chicken in butter in a large skillet. Combine onions and bell
peppers after chicken is near done. Combine other ingredients.
Cook until clear and slightly thick, about 2 minutes. Add to chicken
and cook about 1 hour or until chicken is done. Serve over cooked
rice.
