Szechwan Beef with Vegetables
Serves 4

12 oz steak, thinly sliced
2-3 cup broccoli florets
1 lg red pepper, in thin strips
1 can baby corn, drained
1/4 # sliced mushrooms
1/2 cup sliced green onions
2 cups sauce
1 tsp hot chili oil

In large skillet, with 2 Tbsp oil, stir fry beef 1/2 at a time for
3-4 min. Remove. With 1 Tbsp oil, stir fry broccoli, pepper, and
corn 2 min. Return beef to pan and add gr onions, sauce, and chili
oil. Stir 1 min. Serve over rice.


Sauce

1/4 cup cornstarch
2 Tbsp brown sugar
2 tsp minced fresh ginger
2 large cloves garlic, minced
1/8 tsp cayenne
1/3 cup tamari or soy sauce
2 1/2 Tbsp cider vinegar
3/4 cup water
1 Tbsp chicken broth powder
1/3 cup sherry

Combine all in a quart jar. Shake to mix well.
