Taiwan Pickles

1 English cucumber, sliced in half length-wise and sliced
Salt (to taste)

1 Tablespoon sesame oil
1 teaspoon chili oil (or to taste)
1 Tablespoon rice vinegar

dried crushed chilies to taste

Place sliced cucumbers in serving bowl and sprinkle with salt to
taste. Mix dressing ingredients in a small bowl and pour over
cucumber slices. Stir to coat. Sprinkle with dried chilies to
taste. Stir. Serve cold. (This dish can be made several hours
ahead.)
