THAI BEEF OR PRAWN SALAD

1 cup grilled beef, cut into bite-sized slices, or 1 cup prawns, peeled,
deveined and grilled until just cooked

1 cup torn lettuce leaves
1 small cucumber, thinly sliced
1/4 cup fish sauce
1/4 cup fresh lime juice
1 stalk fresh lemon grass, very finely sliced
2 scallions, finely sliced
10 mint leaves
10 cilantro leaves
1/4 cup thinly sliced shallots
2 tbsp roasted rice powder
2-4 Thai chiles or 1 serrano, chopped

In what is to be the serving bowl, combine the beef or prawns, fish
sauce, lime juice, lemon grass, chiles, mint leaves, shallots and
scallions. Toss to mix well. Add the lettuce and cucumber. Toss
again. Garnish with the cilantro leaves and rice powder.

To make rice powder, put a handful of plain white rice in a hot
dry skillet. Shake or stir it around until it's gold. Let it cool
to room temperature, then put it in a mortar and pestle and grind
to a near powder. It will add a crunchy texture and roasty flavor
to the Thai salad.
