Thai Grilled Beef Salad

1 lb beef (flank steak)

2 tsps sugar
1 tbsp fish sauce
1/4 cup soy sauce

1/4 cup shallots, minced
2 stalks green onion, minced
1/4 cup lime juice
1 tsp red pepper flakes
1 handful cilantro, coarsely chopped
1 tsp sugar
1/4 cup fish sauce

1 head romaine lettuce
6 cherry tomatoes
2 pickling cucumbers

Thinly slice beef, mix with marinade. Marinate for 1 hour at room
temp, stirring to coat all. Cook under broiler, pan fry, or grill.
(If grilling, slice after it is cooked.)

Mix dressing ingredients, toss with beef. Adjust taste if needed
- I prefer mine with more sour, hot, and sweet - and this was a
bit salty for my taste.

Wash and tear up 1 head of lettuce, slice tomatoes in half, and
thinly slice cucumbers. Arrange lettuce on a plate, scatter tomatoes
and lettuce. Using a slotted spoon, transfer beef to the center
of the lettuce.
