Barley Pilaf

3 cups water 1 bouillon cube 1 cup quick pearled barley 2 Tablespoons vegetable oil 1/2 cup chopped onion 10-oz pkg frozen peas
In large saucepan, bring water and bouillon cube to boil. Stir in barley; reduce heat, cover. Simmer for 10-12 minutes or until tender consistency. Stir occasionally. Drain.
In large skillet, heat oil. Cook onion and frozen peas in the oil For about 5 minutes; reduce heat. Add cooked barley; mix well. Continue cooking over low heat until heated thoroughly. Stir occasionally.
Yield: Serves 6.
