Black Beans and Rice 2 tsp. oil 1/2 cup red onion chopped 1/2 cup orange juice 1/4 cup lime juice 1/4 Tbsp cilantro 1/2 tsp. ground red pepper 1 red bell pepper chopped about 1 cup 1 papaya peeled seeded and diced 2 clove garlic chopped 4 cup black beans cooked, rinsed and drained 5 cup cooked rice Heat oil in skillet over medium heat. All ingredients except beans and rice, papaya and cilantro. Cook for 5 minutes, stirring occasionally, until the bell pepper and onions are cooked. Add papaya and cilantro. Cook for 1 minute. Stir in beans. Cook for about 5 minutes or until hot. Serve over the rice.
