Black Eyed Peas
dried black eyed peas 1 large whole onion l tsp. of brown sugar cubed salt pork 1 large onion sliced freshly cracked black pepper
Around here we "have" to have blacked eyed peas for New Years Day, otherwise, my mother-in-law insists we'll all have bad luck. This is probably one of the most traditional ways I've ever heard of for cooking the peas. Wash and soak peas overnight. Place in a large pot, together with a large whole onion, l tsp. of brown sugar and simmer until tender. Fry up cubed salt pork until very crisp and drain. Using the fat from the pork, add one large onion sliced, and cook until lightly browned. When peas are ready to be served, mix in the sauteed onion and sprinkle with the salt pork and freshly cracked black pepper to taste.
