Braised Beef In Beer

4 slices bacon
2 onions, sliced
1 cup chopped celery
2 cups sliced carrots
1 lb (500g) mushroom , sliced
3 lb (1 1/2 kg) round steak
2 teaspoons salt
1/2 teaspoon black pepper
2 teaspoons grated lemon rind
2 cups (500 ml) beer
1 tablespoons flour
2 tablespoons water

Place the bacon on the bottom of a heavy saucepan. Spread the onion,
celery, carrots and mushrooms over it. Add the meat and sprinkle
with the salt, pepper and lemon rind. Cover and cook over a low
heat for 1/2 hour, turning the meat several times. Add the beer,
recover and cook for 2 1.2 hours longer. Skim the fat from the
gravy. Mix the flour with the water and stir into the gravy until
thickened. Cook five minutes longer. Slice the meat and serve with
the gravy. Serves 3-4

This little recipe is simply awesome. Who would have thought that beer, when paired with inexpensive cuts of beef, would make such a tasty , unforgettable dish.(and I hate the taste of beer!) My only suggestions to add to this recipe is to fry your bacon in a large skillet. When crispy, remove from the pan and add 2 sliced onions and minced fresh garlic to the skillet, cooking until slightly brown. Remove the onion and garlic mixture and THEN place your beef roast in the SAME skillet and cook over a medium heat on both sides until the meat is just browned and seared, but not fully cooked, and then remove immediately. Add more of the above mentioned bacon grease to the pan, along with 1/4 cup of flour, salt and pepper to taste,the cooked onions and garlic, 1/2 teaspoon of thyme and 2 to 2 1/2 cups of DARK beer.( It is VERY important to use the dark beer.) After you have made the BEER GRAVY, place the meat in a baking dish and completely cover with the gravy and bacon, and 1 container of fresh -sliced mushrooms.(or canned ones) Bake for about 45 min. or until the beef is the desired doneness.Serve with mashed potatoes, carrots and green beans and rolls. This will knock his socks off, ladies.(And definately place you ahead of all the others in his book. It works EVERY time !!!)
