Chicken Fried Steak 1 pound round steak or minute steaks 1 egg, beaten 3/4 cup bread crumbs 1/2 teaspoon salt 1/4 teaspoon pepper 4 tablespoons oil 2 tablespoons flour 1 cup broth or milk
Pound steaks until 1/4 inch thick. Dip steaks in egg and then in bread crumbs mixed with salt and pepper. Heat oil in heavy skillet over medium to low heat. Brown steaks 8 to 10 minutes on each side. Place steaks on a warm platter. Keep hot. Stir flour into pan drippings. Stir over medium heat until lightly browned. With a whisk, stir in broth or milk. Cook until it thickens into a gravy. Add water if necessary, to thin. Add salt and pepper to taste. May return steaks to pan and simmer until ready to serve or serve sauce separately.
