Golden Glazed Flank Steak
1 envelope Lipton onion soup mix
1 jar (12 oz.) apricot preserves
1/2 cup water
1 flank steak (about 2 pounds), cut into thin strips
2 medium green, red, or yellow bell peppers, cut into thin vertical slices
hot cooked rice
Heat the broiler. In a small bowl, combine the soup mix, apricot
preserves, and water. Mix well. In a large shallow baking pan,
arrange the steak and bell peppers. Spoon the soup mixture evenly
on top. Broil, turning once, until the steak is done to taste.
Serve over hot rice.
