Porcupine Meatballs
Yield: 8 meatballs

1 lb ground beef
1 sm onion; chopped
1/2 ts salt
1/4 ts pepper
1/2 c uncooked rice; washed
5 c tomato juice
1 md onion; sliced

Combine ground beef, chopped onion, salt, pepper, and 1/4 cup rice.
Shape into eight meatballs; pat remaining rice on outside of balls.
Mix tomato juice and sliced onions in large frying pan; bring to
a boil. Add meatballs to tomato mixture; simmer for 45 minutes.
