Meatloaf
2 cups finely chopped red onion 2 tablespoon fresh minced garlic 2 celery ribs, chopped fine 2 carrot, shredded fine 1/2 cup finely chopped scallion 2 tablespoons butter 2 teaspoons salt 2 teaspoons freshly ground black pepper 2 teaspoons Worcestershire sauce 1/4 cup ketchup 3 pounds ground chuck 2 pounds mild ground pork sausage 1 cup fresh Italian bread crumbs 2 large eggs, beaten lightly 1/3 cup minced fresh parsley leaves 1/4 cup ketchup
Preheat oven to 350F. In a large heavy skillet cook onion, garlic, celery, carrot, and scallion in butter over moderate heat, stirring, 5 minutes. Cook vegetables, covered, stirring occasionally, until carrot it tender, about 5 minutes more. Stir in salt and pepper, Worcestershire sauce, and 1/4 cup of ketchup and cook, stirring, 1 minute. In a large bowl combine well vegetables, meats, bread crumbs, eggs,1/4 cup ketchup and parsley. In a shallow baking pan form mixture into 1 oval loaf and spread remaining 1/4 cup ketchup over loaf. Bake meat loaf in oven 1 hour at 325 degrees or until a meat thermometer inserted in center registers 155F. When done remove from pan and let set on a plate about 5 mins before serving. Add a little flour and water to the dripping and a little salt and pepper and 2 Tbsp of butter and whisk under med heat until thicken. This makes a nice tomato gravy.
And Do Not forget the dessert... Home made rice or bread pudding!! and of course do not for get the big pitcher of milk...;-)
