Meat Loaf and Potato Casserole

1 pound lean ground beef
1/3 cup cracker crumbs
1 onion, finely chopped
1 egg, lightly beaten
1 tablespoon chili powder
3/4 teaspoon salt
4 servings warm instant mashed potatoes
11 oz can whole kernel corn, drained
6 green onions, thinly sliced
1/2 cup shredded Cheddar cheese

Preheat oven to 375 degrees. Coat an 8-inch square baking dish with
nonstick cooking spray. In a large bowl, combine ground beef,
cracker crumbs, onion, egg, chili powder, and salt; mix well.
Press into the baking dish and bake 25 to 30 minutes, or until
juices run clear. Drain off excess liquid. In a medium bowl, combine
potatoes, corn, and green onions. Spread over the meat loaf and
sprinkle with cheese. Bake 8 to 10 more minutes, or until cheese
melts and top begins to brown.
