Banana Meatloaf
Serves 8

3 lbs lean ground beef
2 eggs
2 large ripe bananas mashed
1 small onion finely grated
2 tsp salt or to taste
1/2 tsp black pepper
1 cup fresh soft white bread crumbs (optional)

Combine all ingredients and pack into a large loaf pan or a 9 inch
square pan. Bake 350F about one hour. Pour off any liquid that
accumulates in the pan. Serve as you would any meatloaf-hot or
cold. When cold the meat slices well and the bananas keep the meat
moist plus add a nice subtle flavor.
