Pot Roast

3 lb Swiss Steak
1 tbls vegetable oil
1/4 cup soy sauce
1 cup coffee
2 bay leaves, crumbled
1 garlic clove, minced
1/2 tsp dried oregano
2 onions, sliced
additional soy sauce and coffee

Preheat oven to 300F or use a small Nesco type roaster. Do not
pound or flour meat. Heat oil in heavy skillet over high heat,
sear on both sides

Meanwhile in large 6 qt roasting pan, combine soy sauce, coffee,
garlic, bay leaves, oregano. Pour in bottom of roaster Layer one
sliced onion on top. Transfer browned meat to roaster and layer
with remaining sliced onion.

Cover and bake at 300F for 3 1/2-4 hours, basting every hour with
pan juices. If liquid boils dry, simply add 1 more cup of coffee
and a liberal splash of soy sauce

Cut in thin slices and serve.

This is also good served on hard roll and pan juices served on side
to dip in, sort of like a french dip. Or serve as is with your
choice of sides.
