Prime Rib

4-5 pound standing rib roast, bone in
3-4 cloves garlic, slivered, optional
Salt and freshly ground pepper to taste
2 Tbsp cooking oil

Rub exposed ends of the meat with the oil. Preheat oven to 500F. Trim excess
fat from the meat. Cut small slits in the meat and insert garlic slivers.
Sprinkle with the salt and pepper. Place roast rib side down in roasting pan.
Place in oven and immediately turn oven temperature down to 375F. Roast for 1
hour. DO NOT OPEN THE OVEN DOOR. Turn oven off and let roast stand in the oven
for 2 hours. Turn oven on again at 375F. Roast 40 minutes for a medium rare
roast (120F on a meat thermometer), 55 minutes for medium (140F). Remove from
oven and let stand for 10 minutes before carving. Skim fat from the pan and
serve the drippings au jus. Serves about 6-8
