Prime Rib

Preheat oven for 30 min to 450 degrees.

Salt and pepper your meat. Put on a rack. Cook at 450 degrees for
15 minutes. Turn down temperature to 325 degrees and cook the
following length: Include the time you seared the meat at 450 in
your total time. For very rare cook 13 minutes per pound, add 3
minutes per lb for med rare, 6 min per lb for med, 8 min per lb
for med well.

In other words if you have a 5 lb Prime Rib and want it rare you
multiply 5 x 13 = 65 minutes. Just make sure you include the searing
time in the total.
